A father-and-son Scottish-Australian dream realised in 96 acres of regenerated rainforest.
The home of Brookie's Gin, distilled from 25 botanicals, 17 of them sourced directly from the surrounding rainforest the Brook family has spent 35 years regenerating (35,000 trees and counting). The distillery is a collaboration between Byron local Eddie Brook and legendary Scottish Master Distiller Jim McEwan, formerly of Bruichladdich and Bowmore.

Australia's only paddock-to-bottle Agricole rum producer — and the home of the famously blue Ink Gin.
Set on a working farm in the Tweed Valley, Husk grows 4 hectares of sugar cane on site, crushing around 450 tonnes annually to produce 320,000 litres of cane juice. The result is true Agricole rum — distilled from fresh cane juice rather than molasses, the same method as the great Caribbean rhum agricoles.
Ink Gin, infused with butterfly pea flower, was made famous globally when Margot Robbie was photographed drinking it the day before her Byron wedding. Today the cellar door is one of the most lovely settings in the region — indoor bar, outdoor picnic blankets, paddocks of cane just beyond.
Born in Byron Bay in 2008 — the village brewery that became Australia's most loved craft beer name.
Pacific Ale was voted Australia's #1 craft beer at the 2020 GABS festival from 2,500 nominated beers. Five years on it remains arguably the single most ordered craft pint in the country — and the brewery's still 100% independent and still based in the region where it started.
The Murwillumbah production brewery sits right on the Rail Trail corridor — making this the perfect end-of-day stop. Flight tastings, seasonal releases and the brewery story. Their commitment to closed-loop sustainability (spent grain to local cattle, organic waste to local farms, 50% recycled bottle content) is what's made them a regional icon, not just a beer brand.

Your driver-guide collects you from your accommodation in a Mercedes V-Class. Morning briefing, coffee for the road, and a 45-minute scenic drive south to Murwillumbah.
Premium e-bike fitting at the historic 1894 Murwillumbah Railway Station — the trailhead. Helmet, high-vis, water bottles. Quick orientation on the e-bike controls and trail etiquette.
Onto the trail. Rolling green dairy country, heritage railway bridges, glimpses of Wollumbin to the west. Easy pedalling on flat former railway grades — the e-bike does the work.
The highlight of the ride. The 1894 Burringbar Range Tunnel is 524 metres long, carved through the range, and home to glow worms and microbats. Genuinely magical — torch supplied.
The Mercedes transfers you to Harvest Newrybar — one of regional NSW's most celebrated hatted restaurants. Three courses, paired regional wines, relaxed pace. Around 2 hours of long-lunch heaven.
